Honey walnut cookies

 Hello guys. Trust me, these cookies are so good just follow this so simple recipe and you'll see how great they are for yourself. Simple as making sugar cookies and also healthier than most cookies. I use honey/light brown sugar as the sweetener vice white granulated sugar and olive oil where regular cookies usually call for butter or shortening . . . no eggs needed. The dough can be mixed in just one bowl and doesn’t require anything more than a spoon to bring it together. The recipe makes a medium size batch, but can be doubled if you want . . . lets get started then
Simple ingredients: 11/2 cup all purpose flour - 1 tsp baking powder - 1/2 tsp baking soda - 1/4 tsp salt - 1/4 cup light brown sugar - 1/4 cup olive oil - 1/4 cup honey - 1 tsp vanilla extract - 1/3 cup chopped walnuts 
Prep: Preheat the oven to 350F. In a large bowl, whisk together flour, baking powder, baking soda, salt and sugar. In a small bowl, whisk together oil, honey and vanilla extract. Pour into flour mixture and stir until crumbly. Add the walnuts then stir until incorporated in the cookie dough. Shape into 14 rounded balls . . .approx 1-inch balls, then place on baking sheet. It is easier to roll the dough in your hands or with a small scoop. Once the balls are rolled push the balls slightly with your thumb. Bake for 10 minutes or until cookies are lightly browned around the edges. Let cool completely on baking sheet for 2-3 minutes before serve time
