Here’s my take on chicken fried rice.. so yummy, so comforting. I think I may have cracked the code on great tasting "restaurant-like" fried rice.. it's all about the heat and the simple ingredients I've listed ... shhhh, (don't tell nobody). If your heat is really hot then you should be fine. What I like most about this dish is that you can almost put in any type of veggie or meat you choose without messing it up. Making this dish yourself IMO is even better than the restaurant.. as always ..I know what the ingredients are, it's simple easy to make, and healthier for you.. let's get to it
Simple ingredients: 3 cups Jasmine rice (use whatever rice you have but I think Jasmine rice is one of the secrets to good tasting fried rice), 1/2 pound slightly seared boneless chicken breasts, chopped in chunks - 3 sprouts green onion - 1 cup frozen peas - 1/4 cup bean sprout (dried) - 1 large white onion, chopped - 2 cloves garlic or 2 table spoons dried garlic, minced - 2 eggs - 3 tablespoons sesame oil - 1/4 cup soy sauce of choice - 1 table spoon fish sauce of choice - 1 table spoon oyster sauce of choice - 2 table spoons rice wine vinegar of choice - 1 table spoon white pepper - 1 teaspoon kosher salt/sugar
