Chicken salad sandwich
This recipe is good for day or night and was 100 percent made from scratch ...even the bread :)
Ingredients: 4 cups cooked, shredded chicken - 1 1/2 cups chopped celery - 1 1/2 cups red grapes, halved - 2 green onions, thinly sliced - 1 cup mayonnaise - 1/4 cup sour cream or ranch dressing - 2 Tablespoons fresh dill, chopped - 1 teaspoon black pepper - 1 teaspoon salt - juice of 1 small lemon - 8 buns/ rolls
Instructions: Add the chicken, celery, grapes and green onion to a large bowl. Toss to combine. Set bowl aside. In a small bowl, add the mayonnaise, sour cream, chopped dill, pepper, salt and lemon juice. Whisk together until combined. Pour the dressing over the chicken mixture. Stir until combined.Cover and refrigerate 6 hours or overnight.Slice each roll in half. Spread 1/2 cup of chicken salad over bottom half. Top with the other half. Serve and enjoy

Ingredients:1 1/2 cups all-purpose flour - 2 teaspoons baking powder - 1/2 teaspoon kosher salt - 1 cup plain whole-milk yogurt - 1 1/3 cups sugar, divided - 3 extra-large eggs - 2 teaspoons grated lemon zest (3) - 1/2 teaspoon pure vanilla extrac

Golden sweet cornbread
Ingredients: 1 cup all-purpose flour - 1 cup yellow cornmeal - 2/3 cup white sugar - 1 teaspoon salt - 3 1/2 teaspoons baking powder - 1 egg - 1 cup milk - 1/3 veg oil
Directions: Preheat oven to 400 degrees F. Spray or lightly grease a 9 inch round cake pan. In a large bowl, combine flour, cornmeal, sugar, salt and baking powder. Stir in egg, milk and vegetable oil until well combined. Pour batter into prepared pan.Bake in preheated oven for 20 to 25 minutes, or until a toothpick inserted into the center comes out clean

Flat bread biscuits
Ingredients: 300g flour - 1 Tsp Sugar - 1 Tsp Salt - 4 Tbsp yoghurt - 2 Tbsp Melted Ghee - (butter) 100 ml milk - 100 ml warm water
Instructions: Sift the flour, sugar into a bowl and add the sugar. Mix in the the yoghurt and ghee and then mix together the milk and the water and add to the bowl, form together to make a soft dough and then knead on a lightly floured surface for 3 minutes until smooth. Cook in the oven 450 F for 10 minutes

Peanut butter chocolate cake
Ingredients: Cake:1 1/2 cups all-purpose flour - 1 1/2 cups granulated sugar - 3/4 cup cocoa powder - 1 1/2 teaspoons baking soda - 3/4 teaspoon baking powder - 3/4 teaspoon fine salt - 3/4 cup buttermilk - 3/4 cup espresso, warm - 1/4 cup unrefined coconut oil, warmed - 1 tablespoon vanilla extract2 large eggs
Icing:12 ounces cream cheese, room temp - (1 stick) butter, room temperature - 2/3 cup creamy peanut butter - 3 cups powdered sugar - 2 teaspoons vanilla extract
Preheat the oven to 350 degrees F and line two 8-inch nonstick cake pans with parchment paper. Combine the flour, sugar, cocoa powder, baking soda, baking powder and salt in a large bowl. In a second bowl, whisk together the buttermilk, espresso, coconut oil, vanilla and eggs. Make a well in the dry ingredients and add in the wet mixture, whisking until just combined. Divide the batter evenly between the two prepared cake pans. Bake on the center rack until puffed, the sides pull away from the edges and an inserted cake tester comes out clean, 30 to 35 minutes !Enjoy
