Shrimp and couscous

two cups whole grain couscous, brand of your choice
1/4 cup olive oil
a pinch of cayenne     
one tsp salt/pepper    
one pound raw shrimp, peeled, deveined    
one small sz onion, minced by food processor         
two cans of chicken broth, use more if need 
Prep:
Pour the dry couscous into a medium sauce pan
Add chicken broth, olive oil, onion, salt, and pepper
Stir until the grains of couscous is coated with oil and onion is tender
Cover pan and put aside
Add one tbsp of olive oil to a medium skillet and place over high heat
Sprinkle shrimp with cayenne 
When the oil begins to pop add shrimp and saute for about a minute
on each side or until almost cooked through
Serve with your favorite veggies
