Ingredients:
1/4 cup butter, softened
1/4 cup butter, softened
two eggs, separated
one cup sugar
3/4 cup evaporated milk
one 1/2 cups cooked mashed sweet potatoes
one teaspoon vanilla extract
1/2 teaspoon nutmeg
1/2 teaspoon cinnamon
1/4 teaspoon ginger
one unbaked 9-inch pie crust
Directions:
Preheat oven at 350 degrees F
Cream butter and sugar with an electric mixer
Beat until blended then add egg yolks and beat
Stir in sweet potatoes/sweet potato mix -
vanilla, milk, nutmeg, cinnamon, and ginger
In a separate bowl, beat the egg whites
When foamed, slowly add 1/4 cup sugar and beat until smooth
Fold into the sweet potato mixture
Place in pie crust, bake for about 45 minutes
Slice it - Serve with whipped cream or ice cream
Sweet potato pie is definitely one of my holiday favorites
