Oven pot roast

Ingredients: 1/4 cup olive oil - boneless roast, trimmed - teaspoon kosher salt - 1/4 teaspoon freshly ground black pepper - 1 cup coarsely chopped onion - 1 cup dry red wine - 4 thyme sprigs - 5 garlic cloves, chopped -1 can fat-free, less-sodium vegetable broth - 1 bay leaf - 4 large carrots-optional, peeled and cut - 2 cups potatoes, peeled and cut - fresh thyme leaves
Directions: Preheat oven to 350 degrees. Place roast in center of large piece of aluminum roasting pan. Brush meat with olive oil, prepare roast as you would. Wrap loosely in foil and bake at 350 degrees for 2 1/2-3 hours
