Ingredients: 1 cup of plain Greek yogurt - 4 tbsp olive oil - 14 cloves garlic, minced - 2 ½ tbsp dried oregano - 2 tbsp lemon juice - 1 tbsp salt - 1 tbsp ground black pepper - ¼ cup fresh cilantro, rough chopped - 3 lbs chicken pieces
Prep: For the marinade, combine the yogurt, olive oil, minced garlic, oregano, salt, and pepper in a bowl. Add the lemon juice, you can use a fresh lemon from half of a lemon (about 1-2 tbsp). Stir until the ingredients are well combined. Roughly chop a handful or about ¼ cup of cilantro then stir into the marinade. Add the chicken pieces, cover with plastic wrap, removing as much air as possible ..make sure the chicken is well coated. Refrigerate for 60 minutes. After the marinating is complete cook the chicken on a grill or preheat the oven to 375 degrees and bake the chicken for 45-60 minutes or until golden brown, serve with a bed of rice, salad, and pita with butter - enjoy
