This is my go-to soup. So easy to make and only takes just a few ingredients to prepare.
Simple ingredients: 1 package of baby carrots - a few celery stalks
2 cans of vegetable broth or you can use chicken broth if you like
a pinch of salt and black pepper - 1 large onion - 3 cups of water
(sometimes I like to add in a 2-3 cubed potatoes, this time I didn't)
Boil on medium heat for about an hour and there you have it
.. a nice pot of hearty veggie soup
..perfect for keeping warm in the cool weather seasons or great for a healthy meal
