One of my favorite things I like to bake during the holiday seasons are small size desserts or "dessert minis" per say. Pecan pie minis was a recipe I tried out a couple of years ago which have become a favorite - Pecan minis are pretty much a smaller size of the large size pecan pie.
Ingredients:
two cups of whole pecans - 3/4 cup sugar
3/4 cup dark corn syrup - three large eggs, lightly beaten
one tablespoons melted butter - one teaspoon vanilla extract

1/8 teaspoon salt - two packages of frozen tart shells
Prep:
Preheat oven to 350º
Roast pecans even layered on a round pizza pan
for about five mins until toasted
Stir together sugar and corn syrup in bowl
Stir in pecans, eggs, vanilla extract, and salt
Spoon about 1/4 cup pecan mixture into each tart shell
Place tart shells on a large baking sheet
Bake at 350º for 25 to 30 mins or until set
Move to wire rack and let cool completely for about one hr
Garnish with mint leaves or whip cream, if desired
