Pumpkin bread bars

Ingredients: 4 eggs - 1 2/3 cups white sugar - 1 cup vegetable oil - 1 15 oz can pumpkin puree - 2 cups all-purpose flour - 2 teaspoons baking powder - 1 teaspoon baking soda - 2 teaspoons ground cinnamon - 1 teaspoon salt - 1 package cream cheese, softened - 1/2 cup butter, softened - 1 teaspoon vanilla extract - 2 cups sifted confectioners' sugar
Directions: Preheat oven to 350 degrees . In a medium bowl, mix the eggs, sugar, oil, and pumpkin with an electric mixer or by hand until light and fluffy. Sift the flour, baking powder, baking soda, cinnamon and salt. Stir into the pumpkin mixture until thoroughly combined (do not over mix). Pour batter evenly into an ungreased pan. Bake for 25 - 30 minutes in preheated oven. Let completely cool before frosting
Frosting: Cream together the cream cheese and butter. Stir in vanilla. Add confectioners' sugar a little at a time, beat until mixture is smooth and creamy. Spread evenly on top of the cooled bars. Cut into lovely squares
